It really depends on the shampoo. Buy the ones that advertise their scent and don't stand in the shower too long after you wash it out. The scent usually stays for quite a while no matter which shampoo you're using. i think it might depend also on what product you use,
try alberto balsam. i use it, it stays smelling lovely and keeps my hair nice :)
i shouldn't think having yoyur hair in a bun or not will change anything

some stay 4 long time......
